Doughnut craving=morning glory muffins

I've been craving homemade donuts lately.  Bad.  The other night I found a recipe for maple bars that looked amazing.  I immediately whipped out my KitchenAid and made the dough only to ruin it a couple of hours later.  No biggie right?  I made the dough again and this time I fried the doughnuts only to find out later that they were raw.  *sigh*

Today I decided to face my doughnut making fears and try the maple bar recipe again but realized that I didn't have all of the ingredients.  Naturally, I turned to a healthyish (yes, that is a word) morning glory muffin recipe.  Same thing as doughnuts right?  

Well, they were glorious.

Morning Glory Muffins

Ingredients:

  • 3 eggs
  • 3/4 cup apple sauce
  • 1/4 cup vegetable oil
  • 1 tbs vanilla extract
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup white sugar
  • 1 tbs ground cinnamon
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups grated carrots
  • 1 apple-peeled and chopped
  • 1 cup raisins or dried blueberries

1. Preheat oven to 375 degrees.  Grease muffin tin (I used cupcake liners but wish I had greased the pan-they will stick.  You have been warned!)

2. Whisk eggs, apple sauce, oil, and vanilla.

3. Stir flour, sugar, cinnamon, baking powder, baking soda and salt.  Stir in carrots, apple and raisins (or dried blueberries).  Stir in apple sauce mixture just until moistened. Spoon* the batter into the prepared muffin tin, filling them 3/4 full.  

4. Bake at 375 degrees for 15 to 20 minutes, or until the tops are golden and spring back when lightly pressed.  

* I use this scoop for cookies, cupcakes and muffins.  This thing will change your life.  Run, don't walk, to your nearest pampered chef distributor.  

What I learned today baking: knives are sharp guys.  However, like any obsessed Chopped fan, I know to change my knife and quickly throw on a glove and tough it out.  I'm ready when you are Food Network.

Welcome

Welcome to my blog!

I am a 26 year old wife and dog mom to our bichon Sokka (Avatar geek).  I live in a small town in rural Alaska so I do my best to find crafty things to keep me busy...especially on the days we are getting only 2-3 hours of sunlight.  No I am not joking.


I made Sokka this bowtie for the Oscars.  Because 'merica.
